My name is Nestor Llorca,you can call me Nhez, 30 years old and I have been a barista for 10 years. For me, being barista is one of the hardest profession especially when you are in the specialty coffee industry.
I started as a barista in a local, commercial coffee shop. And after 7 years, and I wanted and needed to explore and develop my knowledge and skills even more . One day, I decided to apply and work for another other coffee shop and was fortunate to be accepted to work for Toby's Estate Coffee Roasters PH. Without any knowledge about specialty coffee, I pushed myself to learn and be part of the team. As a Junior Barista, sobrang daming learnings ang natutunan ko in that position, and I would like to thank the man behind my success, Raoul de Peralta, siya yung naging Mentor/Trainer/Guru/Master at Tatay nameng lahat.
He introduced to me the true meaning of specialty coffee, from bean to cup, from farmers, from places where started, from origins and the quality of every coffee beverage. Sa kanya ko natutunan ang lahat ng yan. Sir Raoul is very passionate, hardworking, very strict but has a sense of humor and a coffee addict!
To prove na isa siyang magaling na mentor, hindi niya hinayaang hindi kame matuto. Sobrang galing niya. Natuto ako sakanya ng calibration, extractions at kung pano mag dispatch or not sa bad shot at goodshot. Ginalingan ko pa lalo, hanggang sa pinagkatiwalaan niya ako at inappoint niya ako sa pagiging Senior Barista. Akala ko hanggang doon na lang ang malalaman ko, sobrang laki pala ng mundo ng coffee. Kaya sobrang thankful ako sa taong tumulong at nagturo samen ng marami tungkol sa specialty coffee. I learned from him how to pull delicious shots, how to calibrate my shots, technical standards, how to steam the milk properly and how to pour for the latte art. Salute to Mr. de Peralta! He is one of the best guru in coffee industry. Di na ko magtataka kung bakit maraming tao ang kilala sa kanya. Until now, bitbit ko pa rin lahat ng learnings na yun. I am now the Head Barista of Kava, a specialty coffee shop in Doha, Qatar. I'm very proud to say that I will not be in this position if not or Sir Raoul. Baon ko lahat ng turo niya, at willing akong ishare ang lahat ng to sa mga susunod na henerasyon!
